2 cups heavy cream (no one said this was healthy...)
2 can cream of chicken soup
1/3 cup chopped onion
3 cloves pressed or minced garlic
10 medium red potatoes
1 1/2 tsp. salt free garlic and herb seasoning
Salt and pepper
5 strips of bacon
Bag of mild cheddar cheese (1 1/2 cups in soup)
Steps:
1. In a large pot combine chicken broth, heavy cream, cream of chicken soup, onion, garlic, salt, pepper, and garlic herb seasoning.
2. Scrub and clean red potatoes under warm water. (I keep the skin on, makes it a little healthier) chop potatoes in bit size chunks and put into the pot. Bring to a rolling boil and reduce to a simmer. Let cook for 45 mins or until soup is thick and potatoes are tender.
3. Once potatoes are soft and tender add in 1 1/2 cups of mild cheddar cheese.
4. While your soup is cooking cut your bacon into bite size pieces and fry until crispy.
5. Serve soup topped with a little extra cheese and bacon.
Enjoy! Perfect winter soup, even better on a day like today....
